The bottle is wrapped in satin in elegant burgundy packaging. The package is completed by a porcelain teaspoon and our brochure which illustrates the history, the production process, photos of the vinegar factory and some recipes.

The traditional Cavalli balsamic vinegar can be recognized by the metal label, in pewter for the Silver label, golden for the Gold label, depicting, in an original frame, the signature of Matilde di Canossa in relief.
Product certification is ensured by numbered labels of the shape and color established by current regulations.

The 250ml bottles feature screen-printed designs in a limited and exclusive series of 200 pieces. Also in this case we remember Canossa by reproducing the episode in which the Marquis Bonifacio, father of Matilde of Canossa, gives a small silver barrel full of the precious and appreciated vinegar to King Henry III.
We are in 1046.

The episode is represented in different styles: the last one takes up some drawings by Klimt.

Single-dose packs (10 ml) in a sealed box are also available. The closure of the vials is ensured by sealing wax, each with the numbered label of the color established by the sensorial analysis.

2 - THE CAVALLI BALSAMICS

Cavalli Balsamic Vinegar represent “the evolution of the species”: they are the result of constant commitment and continuous research to improve the characteristics of Balsamic Vinegar while respecting family tradition.
The different processes take place in temperature-controlled environments, in this way the optimal conditions are created to promote alcoholic fermentation, slow and difficult acetic oxidation as well as promoting long aging in small barrels of different woody essences. The woods commonly used are oak, chestnut, mulberry, cherry, juniper. Often the maturation is completed in small barrels of mulberry and/or chestnut.

Cooked must of Trebbiano grapes is used, without the addition of thickeners, preservatives, colorants and aromas.

Depending on the aging period, Cavalli Balsamic Vinegar is distinguished in
